Holy smokes! It's hard to wrap my head around the fact that we've been truckin' along for FIVE YEARS to the exact date, so I had to write a blog post because there's SO MUCH "stuff" I wanted to share from along the way! In early 2012, I had an "idea/brainstorm/hungover moment of thinking wouldn't it be cool if an ambulance delivered mac & cheese?".... and now I'm typing out history! I'm laughing/cringing at some of these images, but sharing them because... A) they're pretty funny B) it's proof that anything is possible with a little (ok, A LOT) of hard work C) we never could've done it without the support of family, friends, and the great community that we serve! Then we started ambulance shopping, and by July we lucked out and found an Ebay post of a "former ambulance turned food truck": &%#! got real, and then we sought professional help on that logo & design (Thanks to our creative friend Boo!): More and more work on the truck followed with taking the wrap off, getting a paint job (which caused me to shed a few tears when I got the price quote), & adding our final graphics: By September, we set an official opening date...the Saturday after Thanksgiving 2012. Opening day was creeping up quickly, and we had a billion things to accomplish (like buying supplies, taking terrible photos of food that I was testing, figuring out permits, creating a website, etc. etc..) All I knew was that I wanted Mac & Cheese on the menu, so I began stuffing our friends with different forms of Mac & Cheese...and had my Nan helping me too (for the record Mac & Cheese muffins were my original idea)! Somewhere along the way the waffle idea was born, and my mom became the waffle making queen! My dreams of making multiple types of waffles soon got crushed when we realized how time consuming this stuff was... but there's always still hope! ;-) More & more kitchen work ensued...thank goodness for the staff at the YWCA for taking a chance & renting their commercial kitchen to us newbies! We ordered shirts & uniforms, and before we knew it, we were off to Purdue University to serve food after the Purdue IU football game...little did I know that it would forever coincide with Small Business Saturday, but I'm sure glad it does now! We were so grateful for the support of our friends who showed up for our debut, and I'll never forget the one random customer who gave me a $100 tip and told me to never give up on my entrepreneurial dream! We trucked on through the weekend and the cold winter months ahead just trying to figure things out, and I cringe when I look at our setup! Thankfully our talented buddy Brian was crafting a shelf for us behind the scenes & now he's built his own amazing business:
We've certainly come a long way, and we thank you from the bottom of our hearts for your continual support, and for making our dream of a fresh local veg food truck a reality!

We were so excited to be asked to be a part of Operation Heart, especially because we enjoy eating healthy - but not eating boring! We love to give comfort food recipes healthy "makeovers" using fresh local produce, lean clean greens, and heart healthy foods (without the junk, i.e. high fructose corn syrup, processed ingredients)! It's so easy to make a few little health concious substitutions in your recipes & we want to share some of our "makeover" recipes with you!
